Roasted dal, red chilli, coriander and curry leaf, ground the way a Tamil kitchen has done for generations. One heaped spoon turns a pot of dal and vegetables into a sambar that tastes like a proper home lunch, no artificial colours or additives, ever.
How to use
The simple sambar, homemade style.
Pressure cook together for 4 to 5 whistles: 1 cup toor dal, 2 to 3 chopped onions, 2 chopped tomatoes, 8 to 10 garlic pods, chopped coriander and curry leaves, 3 to 4 green chillies, ½ tsp fenugreek seeds, ½ tsp turmeric powder, 1 tsp red chilli powder, salt, tamarind juice (optional), 2 to 3 tsp cooking oil and water to the consistency you like.
Once the steam is released, mash the dal, add chopped brinjal, drumstick or any vegetable that goes well with sambar, then add 2 tbsp Gramas Sambar Powder and cook the vegetables through.
Seasoning: heat about 5 tbsp cooking oil, add ½ tsp mustard seeds, curry leaves, a few whole red chillies and ½ tsp cumin seeds. Once the tempering is done, mix it into the sambar, boil for a few minutes and garnish with freshly chopped coriander.
